Utilising an in-house favourite in Talus, Pollys doubled up this hop in two separate versions before accentuating with an Aussie classic Vic Secret, alongside cornerstone hop Simcoe to create an IPA that is an experience from the first sip to the last gulp – a cascading dance of intense pink grapefruit and citrus zest, with underlying passionfruit and berry notes, before a whisper of sage, dried roses and pine for complexity.
